Garden Rosemary Catfish Skillet

One of the things I enjoy most about gardening is being able to walk outside and pick fresh ingredients to use in my cooking. This week, I harvested some fresh rosemary from my garden and used it to make a simple skillet catfish dinner. It turned out so flavorful that I knew I had to share it. Lately, I’ve been trying to make healthier choices in the kitchen. Instead of deep-frying fish (which I really wanted to do), I decided to cook my catfish in a skillet with olive oil, fresh rosemary, and garlic. The result was a delicious meal that didn’t feel heavy but was still full of flavor.

Garden Rosemary Catfish Skillet Recipe

Ingredients
4 catfish fillets
2 cloves fresh garlic, minced
Fresh rosemary sprigs from the garden
Salt and pepper to taste
1 tablespoon butter
2 tablespoons olive oil
1 teaspoon cornstarch
About 1/3 cup of water

Directions
1. Heat the olive oil and butter in a large skillet over medium heat.
2. Season the catfish fillets with salt and pepper.
3. Place the catfish in the skillet along with the rosemary sprigs and minced garlic.
4. Cook fish, turning as needed, until almost done. Be careful not to burn the garlic!
5. In a small cup, mix the cornstarch with about 1/3 cup of water until smooth.
6. Pour the mixture into the skillet and gently stir it into the pan drippings.
7. Allow the sauce to thicken for a minute or two while the fish finishes cooking.
8. Serve warm and enjoy.

The fresh rosemary gave the fish a wonderful flavor, while the garlic and light sauce added just the right touch. Sometimes the simplest meals are the most satisfying.

Small changes in the kitchen can lead to big changes in our health—one meal at a time.

This meal reminded me that healthy eating doesn’t have to be complicated. Sometimes all it takes is a few fresh ingredients from the garden and a willingness to try something new.
